  1. Slice or halve the madeleines and set aside. 
  2. Wash and slice the strawberries, leaving the blueberries and raspberries whole.
  3. In a large bowl, whip the heavy cream with the sugar and vanilla until soft peaks form.
  4. Arrange a layer of madeleines in the bottom of a clear serving dish. Top with a layer of mixed berries, followed by a layer of whipped cream, either spooned or piped over top.
  5. Repeat the layers of madeleines, berries, and whipped cream until the dish is full.
  6. Finish with a light layer of whipped cream, fresh berries, and a sprinkle of lemon zest. Chill for 30–60 minutes before serving.
